Pomegranate Dressing

pomegranateI made a salad the other day for an event and the dressing seemed to be a crowd pleaser.

It was mixed baby greens, blue cheese, toasted almonds, pomegranate seeds and pomegranate vinaigrette.

The vinaigrette was:

1 cup of olive oil, 1/3 cup pomegranate vinegar, 1 tsp Dijon mustard, ½ tsp kosher salt & ½ tsp freshly ground pepper.

  1. Where in god’s name do you buy pomegranate vinegar, please? Trust me; Albertsons does not have it, nor the Trader Joe’s in Templeton. Do not even speak to me about Whole Foods, although there is a specialty grocery in SLO. —Sounds good, though, and we have a ton of pomegranates from neighbors. What’s to do with them?
