Japanese Pork Cutlets

Tonkatsu is a Japanese dish of deep fried pork cutlet, which typically placed on a bed of shredded cabbage. It is served with Tonkatsu sauce which a type of thick Japanese Worcestershire sauce that uses pureed fruit as a main ingredient.

Pork Tonkatsu

Serves 4

4 pork chops
1/2 tsp salt
1/4 tsp pepper
1/4 cup flour
1 egg
1/2 cup panko bread crumbs
Vegetable oil for frying

Pound pork to 1/4-inch thickness. Coat with flour, then dip into egg, and finally coat thoroughly with Panko. Deep fry in 1 inch vegetable oil, heated to 350º, 3 minutes on each side, or until golden brown. Place on a bed of shredded cabbage, for presentation. Serve with Tonkatsu sauce.
