I am always looking for new ways to brighten up green beans. Here is a tangy, sweet recipe to add to your recipe box.
Green Beans with Mustard & Cider Vinegar
3 Tbs honey
1½ Tbs whole-grain mustard
1/3 cup cider vinegar
Salt and pepper, to taste
2 Tbs olive oil
1 shallot, sliced
1 lb green beans, trimmed
2 Tbs chopped fresh parsley
In a small bowl, whisk together the honey, mustard, vinegar, salt, and pepper; set aside.
In a large skillet, heat the olive oil over medium heat. Add the shallot and cook, stirring often, for 2 minutes.
Add the green beans and cook, stirring often, for 1 minute.
Whisk the honey mixture again and pour it over the beans. Cook, tossing the beans occasionally so they cook evenly, for 3 minutes or until they are tender but still have some bite.
Sprinkle with parsley.
