This recipe is something I found from Waitrose (a British supermarket). I have tweaked it for US measurements. I will be making this for lunch this weekend.
Spaghetti with Caramelized Onion, Cauliflower & Pinenuts
1 Tbs olive oil
3 onions, thinly sliced
2 tsp sugar
2 tsp balsamic vinegar
2 oz pine nuts
1½ lb cauliflower, broken into florets
1 lb spaghetti
½ cup flat leafed parsley, chopped
Heat the oil in a frying pan, add the onions and cook over a gentle heat for 15 minutes until really soft and golden, stirring regularly. Stir in the sugar, vinegar and pine nuts and cook for a minute longer.
Meanwhile, cook the cauliflower in a pan of boiling salted water for 3–4 minutes until just tender. Drain thoroughly and refresh under cold water. Cook the pasta for 3–4 minutes until tender. Drain.
Add the cauliflower to the onions and season. Toss with the drained pasta and parsley. Check seasoning and serve.
Add a chopped fresh red chili to the cooking onions for a more fiery flavor.
