Sweet Corn & Crab Soup

I was digging up some old recipes from my files and came across this wonderfully easy soup recipe. I am pretty sure my Aunt Marjorie gave me this recipe. It’s from the Penisula Hotel.



Sweet Corn & Crab Soup 

Serves 4

15 oz can chicken broth
6 oz can crabmeat, flaked
15 oz can cream corn
1/8 tsp cayenne pepper
1 Tbs soy sauce
2 Tbs cornstarch dissolved in 2 Tbs cold water
2 scallions, chopped

In a saucepan, bring the stock to a boil. Stir in the crab and corn, bring to a boil, stirring. Add cayenne, soy sauce, cornstarch mixture, stirring and bring to a boil. Simmer for 1 minute. Sitr in scallions.
