These Potatoes

My mother-in-law often makes “Those Potatoes”.  I have no idea where she got the recipe from.  Since I am making our family Easter dinner tonight (it was a rather hectic weekend!), I thought I would make these – Those Potatoes.

Those Potatoes

½ lb bacon
4 potatoes, peeled and sliced
1 onion, sliced
2 cloves garlic, minced
½ tsp oregano
1 tomato, chopped
4 Tbs butter

Fry the bacon in a cast iron skillet, remove from pan. Add the butter to the bacon drippings, then add the potatoes, onions and garlic.  Cook until brown.  Then stir in the tomatoes and chopped bacon, serve.
