I blogged about this in 2009, but did not give the actual recipe. This is a surprisingly simple, inexpensive, unexpected dinner option. I like to add crushed red pepper flakes to spice things up.
Acorn Squash with Sausage, Peas & Onions
1 acorn squash, cut in half lengthwise
1 onion, chopped
8 oz breakfast sausage, cut into 1/2 slices
1 cup frozen peas
2 Tbs butter
salt & pepper, to taste
crushed red pepper flakes, optional
Scoop out the seeds of the squash, place in a casserole dish and add 1/2″ of water. Bake at 375˚ for 40 minutes.
Meanwhile, sauté onion and sausage until brown, add the frozen peas until warm.
Take the squash out of the oven, add 1 tablespoon of butter to each. Then fill with sausage, onion and peas, salt and pepper to taste.
