One of the things (which my husband Eric invented) I always made for my kids is something we call peanut butter ramen noodles. By adding peanut butter, it adds some much needed protein. I also like to add some shelled edamame for even more of a protein boost. It’s really delicious and I love to use chunky peanut butter!
Peanut Butter Ramen Noodles
1 package ramen noodles, with seasoning packet – I use chicken
¼ cup peanut butter
1 Tbs soy sauce
½ Tbs rice vinegar
½ scallion, thinly sliced (optional)
Red pepper flakes, to taste (optional)
Boil noodles following directions on the package, add flavor pack and drain off most liquid. Toss with soy sauce, rice vinegar and peanut butter. Garnish with scallion and red pepper flakes.
