Carrot Cake

carrot cakeThis is my sixth cake that I’ve baked since Sunday. This is so not me – baking that is…  This cake is for my mother-in-laws 84th birthday. I asked her what kind of cake she wanted and this was it. I found the recipe in the family recipe box.

Carrot Cake

2 cups flour
2 cups sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
3 cups carrots, grated
1 cup oil
4 eggs
1 small can crushed pineapple, drained
1 cup nuts, chopped – optional

Preheat the oven to 325˚.

Stir together dry ingredients and then add the carrots, oil, eggs and pineapple.  Beat at medium speed for 2 minutes.  Add nuts if desired.  Pour into a greased 9”x13” pan and bake for 50 – 60 minutes.

Frosting
3 oz cream cheese, softened
¼ cup butter, softened
2 cups powdered sugar
1 tsp vanilla

Beat until fluffy and spread over cooled cake.
