Balsamic Braised Cabbage

Here’s the perfect accompaniment for pork chops. It’s fast and easy!

Balsamic Braised Cabbage

Serves 4

2 Tbs olive oil
1/2 tsp Kosher salt
1/4 tsp pepper
1 onion, sliced
1/2 small (about 1 lb) head red cabbage, cored and thinly sliced
1/4 cup balsamic vinegar
2 Tbs water
1/2 cup flat-leaf parsley, chopped

Heat the olive oil over medium heat. Add the onion and cook, covered, stirring occasionally, for 5 minutes.

Add the cabbage, vinegar, water, salt, and pepper and cook, covered, stirring occasionally, until the cabbage is just tender, 5 to 6 minutes. Fold in the parsley and serve with the pork chops and potatoes, if desired.
