Since I got so many requests here is the Brown Sugar Cake and Brown Sugar Frosting recipe that I make each year for Rich’s Birthday – His mother used to make this for him as a child – but he didn’t have the old recipes so I’m been scouring the web over the years trying to find something
WARNING! – This is VERY sweet. I make it in a traditional two layer cake but it’s so sweet you might want to try cup cakes or even mini – cup cakes…
Brown Sugar Cake
2 Cups Brown Sugar
1 Cup Butter
3 Tbs Sour Cream
1 tsp baking soda
3 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp nutmeg
1 tsp cinnamon
2 Tbs oil
a small amount of milk to get to cake batter consistency
Pre-heat oven to 350 grease and flour 2 9 inch rounds or cupcake tins.
Cream brown sugar and butter, add eggs and mix well.
Mix baking soda and sour cream together and add this to the creamed mixture.
Sift flour with baking powder and spices Add flour mixture to the creamed mixture and beat.
Add oil -and beat – if to thick add milk by the table spoon until consistency of a classic cake batter.
Bake at 350 for 30 – 40 minutes depending on stove – take a look at 20 minutes and if it feels quick – take oven down to 325.
Cool cake completely before frosting.
Brown Sugar Frosting
2 cups brown sugar packed
1 cup butter
1/2 cup evaporated mild
1 teaspoon vanilla
1 box powdered sugar (about 3 1/2 cups)
table spoons of milk to thin
Place brown sugar butter and evaporated milk into a medium pan.
Bring to a boil over low heat stirring continuously.
Remove from heat and add vanilla.
Pour into bowl.
Mix two minutes with electric mixer – Cool 10 minutes.
Add powdered sugar – mix with electric mixer, if too thick begin adding tablespoons of milk until easy to spread – be careful not to add too much milk at once.
Frost completely cool cake.
