Grilled Corn with Queso Fresco, Lime & Chili

When I told my husband to grill the corn, he went a bit overboard! Queso Fresco is a creamy, soft, and mild un-aged white cheese, commonly used in Mexico.

Grilled Corn with Queso Fresco, Lime & Chili

Serves 4

4 ears of corn, shucked
2 Tbs mayonnaise
1 lime
a knob of queso fresco
pinch of sea salt
pinch red chili flakes

Pre-heat a grill (or grill pan) over medium high heat.

Place corn on grill and grill for about a minute on each side, until nicely charred all around.

Brush a little mayo on the corn and then add some crumble the queso fresco over the top. Then, add a squeeze of lime and a sprinkling of sea salt and red chili flakes.

  1. This sounds perfect for corn just picked in RI. A friend just gave me a bottle of “Tajin Classico” — chilis molidos, salt and lemon — because I tried it and became addicted to the taste on fruit.
