My brother-in-law, Todd, made this great dip last week. I am not a fan of olives, but if you are, you will love this dip. I really wish I liked olives!
Cream Cheese and Olive Dip
8 oz pkg cream cheese
5 oz jar of olives with pimento, chopped
2 hard boiled eggs
2 Tbs mayonnaise
1/8 onion, finely minced
Mix cream cheese and eggs until smooth. Add onion, mayonnaise and olive juice to bring to spreading consistency. Stir in chopped olives. Chill.
Serve with crackers. This dip also makes a wonderful sandwich spread.
